White bean, artichoke hummus
Here’s a fun take on the classic.
Ingredients
1 can cannellini beans, rinsed and drained
or 1 1/2 cups cannellini beans cooked from dry170 mL (6 fl oz) jar of pickled artichokes
(opt) remove on large chunk or artichoke to chop in after1 tbsp olive oil
3 cloves roasted garlic
1 tbsp tahini
juice of half a lemon
1 tsp salt
(opt) minced chives for garnish
(opt) sesame seeds for garnish
Instructions
add beans, artichokes (including brine), oil, garlic, tahini, lemon juice, and salt to blender
blend until smooth
garnish as desired
