Whipped shortbread

This recipe has been in my Mom’s recipe book since the 1970s. We can’t remember who Joyce is, but thank you Joyce! Pictured here with my Gramma’s fine china.

Ingredients

  • 1 cup butter, softened

  • 1 1/2 cups flour

  • 1/2 cup icing sugar

Instructions (makes 2 dozen, small)

  1. preheat oven to 350°F

  2. combine all ingredients

  3. beat for 10 minutes, with electric hand or stand mixer

  4. drop by rounded teaspoons onto lined cookie sheet (line with parchment or silicone mat)

  5. (opt) decorate with maraschino cherries

  6. bake at 350°F for 17 minutes until golden on the bottom (watch carefully the last few minutes)
